Grape variety: 100% Chasselas
Description: Utopie is a Chasselas from old vines with an average age of 29 years.
The aim of this wine is to offer not only a Chasselas but above all a fully-fledged white wine. Originating from a classic vinification, no carbon dioxide (CO2) was added before bottling. Its freshness is conferred by its acidic structure. The expression of the local terroir is enhanced by a minimum and late addition of sulphites (SO2, 30mg/l at the time of bottling).
The Chasselas has the particularity of being the grape variety that best represents the terroir. In this case, I cultivate it on alkaline but decarbonated soils with a high proportion of clay and relatively deep. Depending on the plot (there are two), the geological substrate is either morainic or molassic, providing a sufficient mineral source to rely on an organic fertilisation permitted in organic farming.
