Description: For the 2023 vintage, we wanted to prioritise a wine design focused on indulgence with a fermentation period as long as in 2022 (16 days) but with a softer tannic extraction. This is made possible by spacing out the punch-downs from the 4th day of fermentation. The result is a beautiful intensity of material with a silky character and the expression of a rich black fruit.

"Light and vibrant with its aromas of black fruits, it wonderfully combines finesse and elegance. Beautiful spicy and slightly roasted aromas then reveal themselves, leading to a indulgent finish with lovely chocolate notes! Ready to drink now, although the more patient will wait a little longer.
You can enjoy it accompanied by: Roast beef, shallot sauce, grilled meats, Vaudois papet, local charcuterie platter, Sweetbreads ..."
