Description: Typically, Pinot noir is a grape variety that is sought to be presented in a very "traditional" style where the typical fruity character of the grape is valued almost exclusively. In Furie, the approach is different. We wish to offer a Pinot noir with a more pronounced character without giving up the fruity notes that make this grape beautiful. To achieve this, we worked on an extended maceration of 16 days with daily punching down for the first 4 days, then more spaced out, in order to control the intensity of tannic extraction. This allowed us to create a wine that is a more "refined" Pinot noir. In addition to the long maceration, a short stay in oak barrels for a small fraction of the cuvée adds aromatic complexity as well as increased mouth intensity. These characteristics make Furie a wine well prepared for aging.
